Some say using REAL BUTTER makes all the difference, but that is not good enough for us! Butter is butter right? We disagree! We want the best, cleanest, freshest, local cream for the butter that plays such a prominent roll in many of our classes. For this, we turn to 6th generation butter makers in Minerva. Minerva Dairy uses cream from local farms to churn the BEST butter with a 84% BUTTERFAT content. This is essential is French pastries and the closest to what is used in Europe. We use Minerva Dairy’s Unsalted 2# Roll Butter for our buttercream, brown butter, croissants, pastries, ghee and so much more!
