Local Ingredient Sources
Living in France, I learned the essential fact that INGREDIENTS MATTER. They are what set our classes apart from the others. Local ingredients are our priority, therefore seasonality dictates the topics of the classes. Ingredients that cannot be sourced in Ohio are done so through careful consideration and much research…and organically whenever possible. You will find the purest, cleanest, most delicious ingredients in all our classes. Here is how to find them to use in your own kitchen.

Paint Valley Dairy, Beech City OH
Some say using REAL BUTTER makes all the difference, but that is not good enough for us! Butter is butter right? We disagree! We want the best, cleanest, freshest, local cream for the butter that plays such a prominent roll in many of our classes. We choose an unsalted butter made with only cream and cultures with a 85% BUTTERFAT content. This is essential is French pastries and the closest to what is used in Europe. We use Paint Valley for all of our cow, goat, and sheep dairy ingredients.

Careful consideration goes in to sourcing all of our ingredients.
