This is NOT Cleveland Cassata with strawberries and custard. This is the ORIGINAL Traditional Cassata Cake from Sicily and what you would be served in Sicily if you ordered Cassata today. There are no strawberries or custard…rather this incredible and decadent cake consists of:

Among things that have been lost in translation, Cassata cake is a aristocratic Sicilian pastry that has lent its name for a very different dessert here in Northeast Ohio. My grandfather’s parents immigrated to Cleveland in 1907 from a village in the Sicilian Nebrodi Mountains along with so many other Sicilians. Cassata in Cleveland is quite well known but a far reach from it’s origins. Authentic Sicilian Cassata is a bit of a work of art using marzipan of both almonds and pistachios, plentiful and world famous in Sicilia, to enrobe a sponge cake filled with delicious ricotta, another staple of the Sicilian repertoire using sheep’s milk from local shepherds.

While I was living in France, I traveled frequently to Sicily and love everything with ricotta and pistachios. This cake was a special treat to find, but could be purchased by the slice from a pasticceria in Taormina. This cake will focus on almond and pistachio notes in this unique dessert.

In this hands-on baking class, everyone will make and assemble their very own 9” Cassata Cake. Everyone will take home their own 9” whole cassata cake.

Other than the sponge cake, which must be made in advance regardless, this cake is more ‘architectural’. This allows us to host this class in a unique location without a traditional kitchen!
We will be making:
-Pistachio & almond marzipan
-Sweetened ricotta filling
-Sweet cream icing
-Decorating with seasonal and Sicilian specialties
-Almond sponge cake will be provided and recipe will be detailed

Class registration is non-refundable. While we have a no-cancellation policy, if you do wish to cancel your reservation, we will gladly offer a credit if we can find a replacement for your reservation.
