Maple Cream Sandwich Cookies
Growing up in the 80’s, I had a strong aversion to all the fake maple flavoring. REAL MAPLE, however, is a local treat that I enjoy daily…whether it be maple syrup, maple cream, maple sugar, or maple cotton candy! Maple is rich in vitamins and minerals, so it is a local sweet with added benefits. I must warn you, once you start eating these maple cream cookies, it is very hard to stop!
Maple Buttercream Sandwich Cookies
Ingredients:
-175 grams butter, room temp
-50 grams maple cream
-140g maple sugar
-1/2 tsp vanilla salt
-262 grams flour
-71 grams almond flour
In a stand mixer with paddle attachment or using mixing bowl and spatula, combine butter, maple cream, sugar and salt until light and fluffy.
Add flours, mix in only until dough comes together. Wrap and chill for about two hours.
Roll out dough on a lightly floured surface and use your favorite cookie cutter of choice. Transfer to a baking sheet with parchment. Bake at 300F for 23-28 minutes, until just starting to brown. Cool completely before filling with maple buttercream.
Maple Buttercream:
-125g unsalted butter
-75g approximately maple cream
-125g powder sugar
Whip up your maple buttercream in a stand mixer using the paddle attachement until light and fluffy. Adjust ingredients to taste.
